We purchase natural and organic products because we believe that food in its purest state - unadulterated by artificial additives, sweeteners, colorings, and preservatives - is the best tasting and most nutritious food available. When in season we purchase form local farms, when out of season, our food vendors purchase items from the closest geographic regions to reduce carbon emissions in shipping.

Plastic bottles are a major resource-draining product. Even with recycling programs the resources that go into making a plastic bottles (a petroleum based product) are extraordinary. This is why we have instituted our water bottle program where students participating can save money and save the environment. Our Coffee Mug refill program also helps save money and the environment!

We adhere to the University's recycling programs. Please follow the proper disposal for all glass and plastic bottles! Gourmet recycles all cardboard and paper used on campus. All napkins are made of recycled paper and no bleach is used in the renewing process.

Due to major renovations to the dining facilities over the past 2 years, all equipment is equip with the latest in energy efficiencies. As an added measure all of our staff are trained to properly shutdown equipment during closed hours. All of our self service stations go automatically into an energy efficient standby mode when not in use.

Sanolite supplies the chemicals for our dish machines and monitors the temperatures and operations for each machine. They visit each site twice a month and run a thorough test on the dish machine as well as check the sanitation of our sinks/hand washing sinks. These procedures are taken to ensure that we meet the requirements of the State of New Jersey that all chemicals are flowing properly from the systems we use along with our dish machines maintaining all proper temperatures for wash, rinse and dry cycles.
